This easy dish highlights the natural sweetness of fresh, locally grown produce from Harvest Solutions Farm (a partnership with the University of California South Coast Research & Extension Center and Solutions for Urban Agriculture) and Founders Farm, turning butternut squash into a golden, caramelized favorite for any occasion.

This Caramelized Roasted Butternut Squash recipe is a delicious reminder that wholesome food can also be comforting, easy to prepare, and full of flavor.

SERVINGS: 6–8 people

INGREDIENTS:

2 medium butternut squash (about 4–5 pounds total), peeled and cubed

3 tablespoons olive oil or melted butter

2 tablespoons brown sugar or maple syrup

1 teaspoon kosher salt

½ teaspoon black pepper

Optional: a pinch of cinnamon or smoked paprika for warmth

INSTRUCTIONS:

Preheat oven to 400°F and line a baking sheet with parchment paper.

In a large bowl, toss cubed squash with olive oil (or butter), brown sugar or maple syrup, salt, and pepper until evenly coated.

Spread squash in a single layer on the baking sheet and roast for 45–55 minutes, stirring once or twice, until tender and caramelized.

Taste and adjust seasoning. Serve warm and enjoy!

TO SERVE:
Sprinkle with fresh herbs like thyme or rosemary, drizzle with balsamic glaze or honey, or top with toasted pumpkin seeds for crunch.
