 Charlie Palmer headshotAbout Charlie Palmer:

Since the beginning of his celebrated career, master Chef, hospitality entrepreneur and hotelier  Charlie Palmer has received critical acclaim for his signature progressive American cooking, a style built on rambunctious flavors and unexpected combinations with a deep and lasting infusion of classical French cuisine.

Over the years, Palmer combined his creative cooking spirit and flair for business to open twelve notable restaurants across the country, award-winning boutique hotels and a growing collection of food-forward wine shops. These include Charlie Palmer Steak in Washington, D.C.; Michelin-starred Aureole at the Mandalay Bay Resort & Casino; Charlie Palmer Steak at the Four Seasons in Las Vegas; Charlie Palmer and DG Burger at Bloomingdale’s South Coast Plaza in Costa Mesa; the Mystic Hotel in San Francisco’s Union Square; and more.

A member of James Beard "Who's Who of Food & Beverage in America” and named Chairman of the Board of Trustees of the Culinary Institute of America in 2012, Palmer is a respected and admired hospitality figurehead.  A frequent guest on NBC's Today Show, Charlie Palmer is also the author of four cookbooks.

About Executive Chef Sea Kyeong Kim:

Chef Kim first realized his passion for the culinary arts while living in his hometown of Seoul, South Korea where he worked for over five years learning the ways of the kitchen at West Lake Restaurant. Chef Kim moved to New York and attended the Culinary Institute of America and worked at Aureole – Charlie Palmer’s famous New York City flagship restaurant. Later he left New York and moved to London where he had the opportunity to stage at several Michelin star restaurants throughout Europe.

In 2007, Chef Kim returned to the states and the Charlie Palmer Group in Dallas. Later, Kim was lured away to open Charlie Palmer at Bloomingdale’s South Coast Plaza as the Executive Sous Chef, where he also helped launch DG Burger. Today, Chef Kim proudly carries on the role of Executive Chef, offering guests bold flavors and interesting food, created to pair beautifully with the restaurant's extensive collection of wines.
